Effectiveness of aerosolization as a novel disinfection method to inactivate foodborne pathogens on fresh produce

Abstract
Recently numerous foodborne outbreaks associated with fresh produce are increasing. Control methods for fresh produce are primarily focused on practices during packing, but there are no control means to assure the safety of fresh produce during transportation and storage. Current distribution networks also serve to amplify local contamination issues to nationwide or multi-nation outbreaks. Therefore, the objective of this research is to evaluate the use of aerolization as a novel alternative microbial control method during transportation and storage. Among aerosolized sanitizers used, peroxyacetic acid effectively reduced Escherichia coli O157:H7, Listeria monocytogenes, and Salmonella Saintpaul populations on lettuce surfaces without quality degradation and was used for further disinfection of raw produce associated with recent outbreaks. When aerosolized peroxyacetic acid was applied to raw vegetables, E. coli O157:H7, L. monocytogenes, and S. Saintpaul were respectively reduced by 3.98, 3.92, and 3.73 log CFU/g on lettuce, 5.91, 5.50, and 6.17 log CFU/g on tomatoes, 4.02, 4.19, and 3.97 log CFU/g on peppers, 3.96, 3.24, and 3.60 log CFU/g on spinach, and 3.75, 3.31, and 3.59 log CFU/g on green onions after 100 min exposure. Aerosolization is an effective method for pathogen control on fresh produce, and can be easily applied to current transportation and storage procedures with minimum alterations.
