Abstract
Topics include present status of the apple industry in Oregon, production and losses of fruits other than apples, conditions determining the sort of byproduct plant needed, can evaporated apples be profitably produced in Washington, marketing the evaporated product, review of literature relating to evaporation, types of evaporators, the kiln evaporator, heating apparatus, the kiln floor, materials and construction, steam heated kilns, the tunnel evaporator, the carson-snyder all-purpose evaporator, evaporator machinery and equipment, temperatures at which drying should be conducted, relation of temperature of air to moisture-carrying capacity, artificial means of increasing circulation of air in the evaporator, moisture content of evaporated apples, determining when the fruit is properly dried, grading and packing the dried fruit, varieties best for evaporation, yields of dry fruit from different varieties, the utilization of peels and cores, costs of construction of evaporator buildings, and cost of production of evaporated apples
